Thai again!

I love Thai food. The levels of flavor you get is simply amazing.

So, it’s a good thing my father can appreciate Thai food now because I love experimenting with Thai recipes.

And tonigt’s recipe is Curried Coconut Chicken.

Followed it almost to the letter and the resulting dish is simply delicious.

Small changes I made are: used legs and thighs instead of chicken breast cut into chunks. And I made homemade stewed tomatoes instead of canned. 🙂


Fish Soup on a Rainy Day

Hot and spicy soup is always yummy on a cold, rainy day.

So, on this cold, rainy day, I cooked Thai Curry Fish Soup.  Found the recipe at


Followed the recipe almost to the letter except I don’t have lime and kaffer lime leaf. So, I used lemon and bay leaf instead.

Oh, and I used whole fish cut in half instead of fish fillet. 🙂

Tasted like authentic Thai food to me. I wanted more heat but, again, my father can no longer tolerate too much heat in food. As it turned out, he was not even able to sip the soup eventhough I fished out the chilis early on. 🙂

Cooking helps lift me up

When I feel down, I try to lift myself up by, either, cooking or writing my heart out.

I haven’t had the heart or the right inspiration to write in a long time. But, cooking is a different story.

And tonight, I went Thai. 🙂

Gai Pad Grapow (Classic Thai Basil Chicken Stir-Fry)


Taste should be salty-spicy but, since my father has a sweet tooth, I made it a bit sweeter than it should. I also had to tone down a bit on the chili.

But, it still tasted good. 🙂
