Wow. It has been months! I’m not assuming that anyone missed me but I did miss updating my blog.

Well, I have been baking. Actually more like tweaking my favorite chocolate chip cookie recipe (Marha Stewart’s Soft and Chewy Chocolate Chip cookies). And one of the recipes I came up with is my Orange Chocolate Chip cookie.



It had a tangy taste that went well with chocolate and the smell is heavenly! I used semi-sweet chocolate with this one but I am more partial to bittersweet chocolates now. ūüôā


Orange Chocolate Chip Cookies


1 1/8 cup all-purpose flour

1/4 tsp baking soda

1 1/4 tsp corn starch

1/2 cup butter, room temperature

1/4 cup white sugar

1/2 cup packed brown sugar

1/2 tsp salt

1 tsp vanilla extract

1 large egg

rind of 1 orange

2 tsps orange extract

1 cup semisweet chocolate chips


1. In a small bowl, whisk together the flour, baking soda, and corn starch.

2. Cream butter with both sugars at medium speed until light and fluffy,

3. Reduce speed to low.  Add salt, vanilla extract, egg, orange rind, and orange extract.  Until well mixed.

4. Gradually add the flour mixture.

5. Fold in chocolate chips.

6. Chill for at least two hours.

7. Preheat oven at 175C.  Line baking sheet with baking paper.  Using an ice cream scoop (1.5 inch diameter) position dough at least two inches apart.

8.  Bake for 8-10 minutes or until edges are golden and center is still a bit soft.  Halfway through, baking turn the sheet 180 degrees to ensure a more even bake among the cookies.

9. Remove cookies from oven and let cool on baking sheet for 4 minutes.  Transfer to wire rack and let cool completely.

I haven’t baked in a few days. Too busy and all that.

But a couple of days ago I hatched this plan to try coating plain cookies with candy sprinkles and other edible decorations. So, I looked up a simple cookie recipe online, followed it to the letter (except to cut it down to half), and made it my own by adding the sprinkles.

White Chocolate Brownies

As I was lying in bed last night trying to create sleep, it suddenly dawned on me to look for a brownie recipe that uses white chocolate instead of the usual semi-sweet or unsweetened chocolates.

And, what do you know, there are several recipes online. So, this morning, I followed one of the recipes I found.

White Chocolate Brownies


I followed it to the letter. But I did use baking paper instead of just greasing my pan.

Turned out really good. But I might try to also use brown sugar next time to make it hold better. It’s a bit crumbly.

I also noticed that the top cooked really fast despite the fact that I used only the bottom heater. Maybe I shouldn’t have used the top heater when I preheated the oven. Hmmm…

I haven’t been feeling well since yesterday.

Who wouldn’t feel bad when your blood pressure drops to 80/50 and refuses to go higher than 90/60? ¬†Sure, I am used to 90/70 or 100/70 but that is just too low.

So, I took the afternoon off yesterday and the whole day today.

But, late this afternoon I was already feeling a bit better so I decided to spend a little time in my favorite place on earth, my little kitchen.

I have been thinking of making peanut butter cookies for a while now and decided to try the recipe by Martha Stewart that I found online. ¬†Allow me to mention that I just love the internet and all the treasures it holds for me, specially since I am teaching myself to bake and all that. ūüôā

Anyway, tried dear, old Martha’s recipe, with a few adjustment, and it turned out ok. ¬†Although the cookies are very peanut-buttery and I wouldn’t say it’s my favorite amongst all the cookies I’ve made thus far but still tasted good.

Peanut Butter Cookies


To those interested, the adjustments I made are the following:

1. Used only 1/3 cup granulated sugar to reduce the sweetness.

2. Added 1/2 teaspoon cornstarch as I wanted the cookies to be a bit thicker.

3. Did not add nuts as my father doesn’t like nuts but added mocha droplets, instead.

4. Chilled the dough for almost 2 hours, again as I wanted thicker cookies and for them not to run so much.

This was an experimental batch as I wanted to see if my research paid off.  Well, guess it was a success because I did produce thicker cookies.  Thicker, softer, and chewier cookies

So, watch out for better-looking cookies next time. ūüėČ

I think I am on a baking frenzy that I should come out of soon or else I will soon see the results of my baking in my hips. ¬†But, I can’t stop it when everything I try is so good.

Well, almost everything.  I did botch up once or twice but who cares?!?! Anyone and everyone makes mistakes.

Double Chocolate Chip Brownies

Last Thursday I decided to try making brownies and found this easy recipe online.

It did not come out as good as the one in the website where I got the recipe but I have a feeling it was good. ¬†It’s only Sunday and the entire batch is gone. ¬†Finished off by my father.

I am definitely making this again.
