So, decided to try and make fried chicken from scratch.  I say from scratch because normally we use that ready-made batter thing.

But, tonight, I decided to try to make southern-style fried chicken based on Paula Deen’s recipe.

Again, I changed it a bit to satisfy the Filipino taste and my father’s tolerance to spices.

First change, I rubbed the chicken with salt and calamansi instead of the home seasoning (I don’t have garlic powder) per the recipe.

Second change, added salt in the egg mixture and decreased the amount of hot pepper sauce.

And lastly, added salt, dried basil, dried rosemary, and dried thyme in the flour mixture.  Also added a dash of MSG but I know not everyone uses this so you can opt to omit this ingredient.

It’s not as hot as I wanted it to be but it still tasted real good. 🙂
