A Little Oil Won’t Kill Me

I was in the mood to cook again. And, since I still have some pesto from last week, I decided to do Pesto Fried Chicken.


But, as usual, I modified the recipe again to make it my own. đŸ™‚

I marinated the chicken in salt, pepper, and lemon (for a hint of acidity) for 15 minutes. Then, I added milk and pesto into the marinade. Set it aside for 45 minutes.

Mixed flour, salt, pepper, rosemary, thyme, and basil. Dredged the chicken in the mixture and deep fried it.

The result was delicious. I thought I wouldn’t be able to taste the pesto but I did. And the milk gave it a yummy taste.

I would definitely cook this again.
